« In Puligny-Montrachet, the Carillon family has worked for centuries in the area between the village church and the walls of the old château. François Carillon’s Bourgogne Aligoté is sourced from vines over 50 years old, planted in clay and limestone soils; it consists of the rare golden clone of the Aligoté variety. The must goes directly into barrels, where it ferments and matures for nearly a year, with only 10% new oak used. Vibrant and dynamic, this wine offers notes of lime and pink grapefruit, with a saline finish. The Bourgogne Aligoté displays a deep golden hue and a clean, lively bouquet—reminiscent of lime, pink grapefruit, white stone fruit, and a subtle hint of tropical character. On the palate, it is taut and supple, with a lively acidity that provides a firm backbone. The mid-palate possesses moderate volume and a well-defined, yet not heavy, texture. The finish is short, saline, and crisp—inviting the next sip. Far from being a simple, light white wine, this Aligoté exhibits distinct character, minerality, and a razor-sharp freshness, making it an ideal choice as an aperitif, or to accompany shellfish or Japanese-inspired cuisine. It is a wine that honors its origins and defies preconceptions with both precision and elegance.»

Domaine François Carillon
As I observed earlier this year, Domaine François Carillon—as well as François's négociant activity under the same label—is only a new incarnation of a long-standing family tradition that stretches back many generations: François is named after his great-grandfather, François Virot, the pioneering regisseur of Domaine Leflaive who must rank among the 20th century's greatest white winemakers, and he began working with his father, Louis Carillon, with the 1988 vintage. François's style is richer and more gourmand than his brother Jacques's, and he harvests later; in 2018, that translates to ripe, fleshy, textural wines that Carillon contends will be refined by long élevage on the lees. Purists might prefer his elegant, expressive 2017s, but these generous, gourmand wines will no doubt find an avid clientele the world over.
