The Domaine Tour Saint Michel has been a family estate for 3 generations.
At first, Michel FABRE, the founder of the estate in 1930, passed on his passion to his son, Henri.
Together with his wife Eliane, he developed and extended the estate. Today, the vines cover 40 hectares, including 35 hectares in the appellation Chateauneuf-du-Pape.
Mireille, their daughter, is now in charge of the estate, inspired by the family tradition but also bringing a more modern approach.

The estate is located in Chateauneuf-du-Pape,in the south of the appellation (Grand Coulet, Les Serres ..)

The wines of the estate are developed by Mireille and reveal her more feminine touch. This results in subtle and round aromas while keeping the typicity of Chateauneuf du Pape wines.
After being hand-harvested and processed with a strict selection, the grapes are taken to the cellar in order to be destemmed and transferred into tanks.

For white wine, the grapes are pressed out right after they come in from the harvest. At the beginning of the alcoholic fermentation, we separate the juice in 2 parts: a part is vinified in oak barrels, and the other part is vinified in stainless steel vats at low temperature (15°).
For red wine, during the alcoholic fermentation, we proceed to different stages: control of temperature by cooling system, pumping over, ventilation, punching of the cap.

The way we age the red Chateauneuf du Pape wines depends on the different cuvees - either in concrete tank, in cask or in oak barrels.

Domaine Tour Saint Michel – A four generation family run estate

Domaine Tour Saint Michel was first established in 1930 by Michel Fabre. The Southern Rhone Valley estate takes its name from the tower on the property. Michel developed and expanded the estate, which has remained in the hands of same family after having been passed down through generations of the Fabre family.

Since 2007, Mireille, joined by her daughter Magal in 2018, has run the vineyard respecting family tradition aswell as bringing in a more modern style. 

Today Domaine Tour Saint Michel  have 40 hectares, 34 of which are isituated in Châteauneuf-du-Pape, in the sunniest and warmest area of the appellation, in the south, on the round pebbles terroir. The parcels are located in the areas of Galimardes, Crouscroute, Petites Serres, Grand Coulet…Recently, some parcels were acquired in the north, in Terres Blanches, Brusquières and Fargueirol.

The Domaine use six grape varieties of the 13 allowed, Grenache, Syrah and Mourvèdre for red, and Grenache Blanc, Roussane and Clairette for white.They  cultivate the  vineyards following the principles of sustainable agriculture and intervene only when it is necessary, without using chemical herbicides to control weeds. The  goal is to harvest healthy grapes, to bring them to an optimal ripeness but also to respect the environment. In 2019, Domaine Tour Saint Michel  obtained the HVE certification (*), by working in this reasonable and rigorous way, respecting nature and our terroir.

 

 (*) High environmental value (HEV) corresponds to the highest level of a more general scheme of environmental certification for farms. The farm environmental certification is a voluntary approach which aims to identify and promote particularly environmentally-friendly practices applied by farmers. HEV covers four key areas: biodiversity conservation, plant protection strategy, management of fertiliser use and management of water.In order to engage the whole agricultural sector in an approach focused on environmental progress, it is designed on the basis of certification of the whole farm at three levels.
