Gassås Wine: Underbar Barolo
Härliga klassiska aromer. Fyllig, mustig och rik på smak. Underbar redan nu men kommer att utvecklas väl i källaren.

GROWING LOCATION: the vineyard lies in the village of Novello, on the highly-prized “sotto castello” (below the castle) cru facing south, south-east at an average altitude of 400 m asl. The fairly deep limestone soil has medium consistency with good drainage. The vines are planted with a density of 4,500 per hectare, and are trained on vertical trellises and pruned using the Guyot system.

YEAR OF PLANTING: 1999 e 2002

WINE-MAKING PROCESS: vinification on the skins, with a submerged cap and daily pumping over of the must. The maceration is extended for several days following the alcoholic fermentation by steeping the cap in order to increase the extraction and stabilize the colour extracted; after the wine has been drawn off and racked several times, it undergoes malolactic fermentation in steel before being transferred to oak by the end of the year to mature for two years in Oak barrels prior to bottling, which takes place one year before the wine is released.

TASTING NOTES: deep, bright ruby red with slight orange hues; expansive, clear-cut nose, with hints of violet, vanilla, cinnamon, sweet tobacco and liquorice; very structured, soft mouth-filling taste, which is lightly dry with an appealing, long, spicy finish.
Its structure and wealth of polyphenols give this wine an exceptionally long cellar life, during which its tasting properties continue to develop.

Le Origini storiche

“Cantina Le Ginestre” is a wine-growing family business located in the village of Grinzane Cavour, in the Langhe hills, a Unesco Heritage, in Piedmont, North-West of Italy.

The small Ginestre hamlet was already marked on land registry maps as far as the 1700s, and it has always been inhabited by wine-growers, who have passed on their passion for working in the vineyards with the skills that are still theirs today. Some of them, who worked in the property of Camillo Benso Count of Cavour, architect of the Unification of Italy, were the Audasso family’s forefathers.

Nowadays in the Mask Room of the Castle of Grinzane Cavour it is possible to see the Land Registry Maps of the 1783, where our property is marked, as it once was called, the “Region of the Ginestre”.

The Family

After 17 years in which the Count was mayor in Grinzane Cavour, when the estate was sold, the land was purchased by local farmers, including the Audasso’s forefathers, who continued the wine production.
Sadly, this tradition was interrupted by Second World War. Michele Audasso joined the Army and he disappeared in Russia.

Only in the 80s his son Franco, with the help of his wife, Giulia, started the vinification of the vineyards of “Le Ginestre”, carrying on his father’s legacy. Today Gian Luca and Barbara, their son and daughter, pride themselves on continuing the family tradition

Vineyard cultivated with Nebbiolo for the production of Barolo located in the municipality of Grinzane Cavour, at an altitude of 250 metres above sea level, characterised by alluvial soil, Sant’Agata Fossil marl, clayey-calcareous loam, with southerly exposure.

Only organic fertilisers are used in the vineyard, while natural copper and sulphur-based products are used to prevent diseases of the vine. Production is regulated by manual thinning of the bunches in order to promote perfect ripening.


Barolo Le Ginestre is produced from this vineyard only in exceptional years.


The love that binds us to this land, which is incredibly demanding in terms of energy and daily commitment but just as generous when it comes to the quality of its wines, encourages us to improve constantly.
