Fabulous aromatics, so intense and deep, really dark Cabernet fruit, some tapenade and scorched earth, lots of high ‘top notes’ tucked away, so many layers with a hint of almost sweet beef stock/resting juices. This palate is ‘WOW’ from the outset, with glorious tannins and structure leading to an intense and rich mid-palate of total purity. The fruit goes on and on, all sitting on the most amazing backbone of tannin, energy and crispness, and an epic finish. Hugely complex with so much to emerge over time. Brilliant.

Medium to deep garnet-purple colored, the 2015 Proprietary Red is simply singing on the nose, revealing fragrant red and black currant notes plus hints of cinnamon stick, lavender, garrigue, forest floor and pencil shavings. The medium to full-bodied, delicately played palate is wonderfully spicy, with a quiet sophistication and decadence about it, sporting ripe, velvety tannins and seamless freshness, finishing with exotic undertones. Very classy wine! This was tasted as a barrel sample.

Tillverkad av Bob med sin fru Martha McClellan (vinmakare på SLOAN ESTATE) på deras familjegård, LEVY & McCLELLAN är en av Napas A-lista "stängda dörrar" vingårdar, som producerar ultrasällsynta viner (bara 375 lådor årligen) exklusivt tillgängliga tillgängliga på Gassås Wine i Sverige.

Duon producerar två fantastiska cuvéer från sin egendomsvingård som ligger högt ovanför Calistoga, båda baserade kring en kärna av Cabernet Sauvignon. LEVY & McCLELLAN är deras flaggskeppscuvée.

De har ett nästan tvångsmässigt fokus på vingården och vingården, där varje liten parti hanteras individuellt, vilket säkerställer skonsam extraktion och fatjäsning för extremt högkvalitativa, raffinerade tanniner. De är en av de enda vingårdarna som enbart jäser på 225L franska ekfat, med en arbetsintensiv metod för att placera var och en på rullar för att rotera den och försiktigt blanda druvorna med den jäsande juicen. Denna process är skräddarsydd för varje enskild parti och innebär att det tar 3 till 4 fat under jäsningen för att fylla bara ett fat för lagring av vinet.
