65% Xarel.lo, 18% Macabeo & 17% Parellada 

Tasting note

The 2018 Terrers is a different blend than in the past, and this year its composed of 65% Xarel.lo, higher and higher because of climate change, 18% Macabeo and 17% Parellada from a rainy year, more relaxed than the previous 2017 and 2016. Yields are around 7,000 kilos (when the average was 5,600), so good yields and fresh wines, with 11.5% alcohol and a pH of 3.12. It matured in bottle for some three years. It's bone dry, very long and tasty and showcases the house style, elegant and nuanced wines, here with tension and ripeness with fine bubbles but with the wine clearly more important than the bubbles (they use less sugar in the tirage for the second fermentation to have less bubbles). 260,000 bottles produced in a generous vintage. Recaredo is one of the leading producers of sparkling wines, now under the collective brand Corpinnat (in the past, in the Cava DO), and since the 2017 vintage, it keeps moving in the direction to use only organic must to provoke the second fermentation in bottle, something they started working on in 2013. Of course, all their vineyards, 90 hectares, and wines (280,000 bottles) are certified organic and biodynamic, but they don't print the Demeter certification on the label because it has a very high cost.

Incredibly enough, they didn't export any wine in 2007, and today the export market only represents 20% of their volume. They are the best producer of sparkling wine from Spain.

Recaredo Terrers is a completely dry brut nature cava, with no sugar added for sweetening. We recommend to taste Recaredo Terrers at 8-10 ºC.

Recaredo, family of winegrowers. Recaredo Terrers reveals the diversity of calcareous soils and microclimates of the Alt Penedès region. The vineyards stand on loamy soils (balance of sand, silt and clay) and on highly calcareous land which gives a great character and complexity to our wines.

Organic farming. No chemical herbicides or insecticides are used. Only natural organic fertiliser.

Hand-harvested grapes to maintain the properties of the fruits used for a long-aged cava

In-house vinification. Vinification, winemaking and ageing are carried out entirely in Recaredo. With the aim to imbue the final cava with more structure and elegance, 4 % of the blending corresponds to wines that have aged in oak casks.

Long-aged wines. Secondary fermentation and bottle ageing are done exclusively with natural cork stoppers. Cork is sustainable, recyclable and ideal for retaining the original character of a long-aged cava.

Manual disgorging without freezing. Disgorging (the uncorking process) is done by hand without freezing the neck of the bottle, a technique based on skilled craftsmanship and respect for the environment.

The vintage is vibrant and balanced, marked by meteorological contrasts, with high temperatures and little rain in the autumn and winter months. Rains were erratic in the spring, and in May a record rainfall was recorded in the vineyards (155.7 l/m2). Mildew came on hard but the biodynamic treatments we applied proved highly effective. In the end, the grapes harvested were of high quality and in exceptionally good health.
