Robert Parker: Medium to full-bodied, bright and precise, it's an elegant, fine-boned rosé, with a floral finish.
Based on the 2015 vintage and disgorged in October 2019 with around six grams per liter dosage, the NV Extra-Brut Rosé Première Cuvée is showing very nicely, opening in the glass with notes of red berries, tangerine, peonies, freshly baked bread and almond. Medium to full-bodied, bright and precise, it's an elegant, fine-boned rosé, with a floral finish. Give it another year on cork to unwind.

A hymn to the bright delicacy of Pinot Noir, the Premiere Cuvee Rosé is named on account of its composition of only the first pressing.

Multi-vintage rosé, made with Pinot Noir, is created in two ways:
White wine from Pinot Noir: after a quick pressing, and a fast separation of the skins, the juice is very pale and can be vinified as a white wine.
Red wine from Pinot Noir: is obtained by a prolonged maceration of the juice on the skins.
A touch of Chardonnay brings the necessary vivacity to balance the fruits of Pinot Noir.

The blend
First pressing of mainly Pinot Noir with some Chardonnay, the amount of which remains a secret.

Reserve wines
a blend of 25 vintages, going back to 1985.

Ageing
three years sur lie, then a minimum of a further five months after disgorgement.

Dosage
Extra brut, very low dosage, less than 6g/L. A very pure wine.


EYE The pink copper colour with a hint of raspberry when young evolves to salmon while ageing. The fine bubbles are due to a strict selection of the best grapes, perfectly controlled temperature in the cellar and very long ageing.

NOSE The initial aromas of redcurrant and red fruits evolve to morello cherry, wild strawberry and violet while breathing in the glass. A touch of lemon denotes the discrete presence of Chardonnay. With age, aromas tend towards dark fruits like dark cherry, fig and blackberry.

PALATE Reveals red fruit captured at their full freshness. The finish is bright and long.

The Rose Premiere Cuvee is available in half bottles, bottles and magnums. Each bottle carries a label with the month and year of disgorgement. It is produced in small quantities.

Bruno Paillard är en av Champagnes mest inflytelserika personer. Hans ståtliga längd och stiliga uppenbarelse i kombination med ett stort kunnande samt en ordentlig portion ödmjukhet har gett honom styrelseplatser i flera av Champagnes olika organisationer.Idag driver han huset tillsammans med sin dotter Alice Paillard.

Bruno Paillard startade huset 1981 efter att ha arbetat många år som mäklare i champagnebranschen. För att komma igång med verksamheten köpte han upp vinlager hos konkursdrabbade champagnehus eller från odlare. Han är den förste att erkänna att han inte skapat cuvéerna i de tidigaste årgångarna av Bruno Paillards champagner. 83:an är hans första riktiga årgång och redan där märks en klar kvalitetshöjning. Bruno Paillard är fast besluten att bli en av de främsta champagneproducenterna. Han har 120 fasta kontrakt med vinodlare i 32 byar och äger själv 26 hektar i toppbyar.

Han använder femton procent ek i alla champagner utom rosén. Vidare är han noga med att ha ett stort lager gamla reservviner som ligger på fat i sex månader. Endast cuvéen används till Paillards champagne som han finansierar genom att använda andrapressvin i sina övriga märken. Pinotdruvorna kommer mestadels från Bouzy, Mailly och Verzenay, och chardonnay från Mesnil, Vertus, Cuis och Sézanne. Paillard som älskar Jaguarer och konst, har följt i Mouton-Rothschilds fotspår och låter olika konstnärer pryda hans årgångsetiketter varje år. Paillard tillhör också de få som sätter ut degorgeringsdatum på alla sina viner. Förvärvet av Jardin i Mesnil har höjt nivån ytterligare.

I augusti -94 fick Paillard och Chanoine aktiemajoritet i Boizel, som dock sköter sin egen vinifikation som tidigare. I dag ingår även De Venoge, Abel Lepitre, Alexandre Bonnet, Philipponnat, Burtin och Lanson i gruppen (BCC). Dagens vinmakare heter Laurent Guyot. Efter många års frånvaro återkommer Brunos chardonnayvin i stor stil i form av årgång 1995. Druvorna kommer från Chouilly och Cuis vilket ger en mycket ren och fin mineralton. Här finns också ett doftinslag av mogen riesling med drag åt petroleum. Denna spännande aromkarta kompletteras med ett härligt fett och nötigt smörkolelager. Däremot är jag lite förbryllad över de senaste årgångsvinerna som varit oväntat oxidativa, vilket tills vidare kostat en stjärna.

THE BRUNO PAILLARD STYLE, A VERY PERSONAL STYLE

Maison BRUNO PAILLARD sprang from its founder’s desire to create a champagne different from any other; extremely pure.

A great champagne for BRUNO PAILLARD is  above all  an “assemblage”, blending: of diverse crus, grape varieties and vintages. It is about the constant desire to capture the quintessential finesse and elegance which champagne can bring when it is served with love and care.

The BRUNO PAILLARD style is a marriage of elegance and complexity which is manifested as a light and smooth effervescence, a remarkable purity, a true freshness and a silky texture.

The effervescence has to be delicate. The bubbles are very tiny, almost microscopic, yet they are what release the wine’s aromas and give it a smooth and creamy texture on the palate.

The colour has to be completely natural. It is bright: green gold for Blanc de Blancs, golden for Première Cuvée and copper for Rosé. The colour of the vintages becomes deeper, and almost amber after several decades.

The aromas have to be extremely pure: nuances of citrus fruits and almonds from Chardonnay; red fruits from Pinot Noir; and exotic fruits from Pinot Meunier. By using only the first pressing of the grapes, we ensure that the purest aromas are extracted.

The freshness has to be perceptible but not overwhelming. It is enhanced by the acidity of the wine, yet the wine is not acidic in taste. Only a minimum of extra sugar is added (“dosage”) to enhance this remarkable freshness.

Complexity must not be confused with heaviness; rather, it is more about elegance. The balance and the depth of the wines are what gives them their purity. Complexity only reveals itself to those who take time to discover, emerging as the wines age.

Respect for the terroir

Preserving the inimitable chalky minerality of Champagne terroir, is a priority of the Maison. Great care is taken in the BRUNO PAILLARD vineyards, to work sustainably and express this specificity.

Respect for Quality

The pursuit of excellence at Bruno Paillard is manifested at every step of the winemaking. The quality charter has been created through simple criterias which are strictly adhered to:
• Selection of the highest quality grapes: each year, a part of the grapes grands crus or not are downgraded.
• Use of the first pressing only: Juice from the second pressing is systematically declassified.
• Separate vinifications: each “cru” is vinified separately in tank or barrel to allow a precise selection during the blends.
• Addition of “Reserve Wines”: for the multi-vintages Champagnes; incorporating “Reserve Wines” gives consistency to the house style. Depending upon the characteristics of the year, the amount which is added varies from 25% to 50%.
• Ageing two to four times longer than the legal minimum in Champagne… it can reach 15 years for the N.P.U. -“Nec Plus Ultra” (five times what is imposed for a single vintage!)
• Dosage is always “Extra Brut” (extremely low), respecting the purity of the wines.
• The wine rests in the cellar after disgorgement, typically for 5 to 18 months, depending on the vintage.

Champagne – respecting our region

“We must serve the Champagne appellation, not use it.”

Faithful to this saying and a lover of the Champagne region, Bruno Paillard is committed to defend the region and takes active role in shaping it.

Elected in 2001 to manage the “commission on defense of the appellation” department of the C.I.V.C (Comité Interprofessionnel des Vins de Champagne) he works on the respect of the Champagne Appellation in the world. He has also been an elected administrator of Union des Maisons de Champagne since 1989.

He also heads the quality commission on the “Champagne 2030 project”.
