PRODUCTION ZONE
This Nebbiolo comes from the vineyard in Rodello and is 420 meters above sea level. The vineyard is 0,65 hecatres and the soil is fertile, loose and clayey with a South exposure.
TRAINING SYSTEM AND VINEYARDS
The vineyard is composed exclusively of Nebbiolo, with Italian cloning material ( Michet, Lancia) The training system is Guyot with 5.300 vines per hectare. The vineyard is certified organic.
TECHNOLOGICAL MENTIONS
Maceration of the grapes for 15-16 days at a controlled temperature of 28°C with several pump overs during the day. After a rest in stainless steel for 40 days the wine matures in oak barrels and “tonneaux” ( 225 and 500 lt) until it reaches the right maturation, then is left to age in the bottle for at least 5 months.
SENSORY CHARACTERISTICS
An intense ruby red colour. On the nose evident roses, raspberries vanilla and balsamic notes. In the mouth it is dry, round and full bodied with young arrogant tannins, fruit syrup and cinnamon. Balanced and long in the mouth.
PAIRINGS
Pairs with red meats, garlic dips, game and strong cheeses.
