AsSortes tar urvalsprocessen ett steg längre genom att använda druvor från vinstockar mellan 35 och 92 år gamla från sorter som ligger i en naturlig amfiteater, jäsa dem med inhemsk jäst och lagra dem på 500-liters franska ekfat.

Tasting note

I love the incisive character of the 2021 Sorte O Soro, sharp and laser cut, a cold wine, austere, subtle, precise, clean and a sensation of vin de garde, harmonious, and despite being 100% new oak, the wine does not show any oak aromas or flavors; it has purity and energy, with light and a vibrant palate with purity and elegance that reminded me of some of the wines from Jean-Marc Roulot in Burgundy. This is the wine with the lowest pH and highest acidity, and the wine can take the oak with no problem. This is about the vineyard, the granite soils. It finishes with a clear salty touch; you lick your lips, and they are salty. It should develop nicely in bottle.

I went back to visit Rafa Palacios in Valdeorras, which I had not done for a decade. He has expanded his winery, which now looks state of the art, and of course his vineyards, close to 40 hectares, even though he still buys grapes from local growers. In 2022, he processed 400,000 kilos of grapes. We went to the vineyards, did a good tasting and discussed the latest vintages. He's one of the finest white wine producers in Galicia and in Spain. 2021 was a cooler year, lighter wines with freshness, but even though 2022 was a warm year, the wines kept freshness that he cannot explain. As for 2023, it has been a very challenging year, with a heat wave that burnt some of the grapes, a long harvest after a turn of the weather with abundant rains that brought some challenges. In 2024, he will do his 20th harvest in Valdeorras and the 20th vintage of As Sortes. The wines have freshness and saline minerality that often transcend the vintage and even the variety, because of the high altitude of O Bolo and the decomposed sandy granite soils.

UNIQUE SORTE

Wine from one single parcel, located in the Bibei Valley, Santa Cruz do Bolo.

It´s  a “Sorte” planted in terraces in 1978, with an original low vigour clone of Godello, and from where a massal selection has been made for the reproduction of vegetal material for the new plantations of the property.Its south-west orientation at an altitude of 710 meters, is open to the northern slope of the Bibei Valley, receiving a constant breeze that defines its dual character, between maturity and freshness. Its granite soil, stands out for its fine sands with quartz schist. This particularity gives this wine its markedly saline character and its sapid, horizontal minerality.

 

The vines are cultivated in the traditional way, with horses and applying the methods of biodynamic agriculture, as well as pruning and harvesting that are carried out according  the lunar calendar.

Fermentation in 500-litre barrels, and ageing for 8 months.

“It has a great elegance and marked aromas of tangerine skin and magnolia flowers, very subtle and elegant with pleasant minerality. Not only is its elegance magnificent on the palate but also, it has a great acidity and an amazing balance; it is ethereal, but at the same time powerful, "iron fist in a velvet glove" with the electric minerality of granite. It is world class, perhaps the best Spanish white of the modern era"
